A’ysha Callahan, a 24-year-old food scientist, is making waves in the culinary world by spearheading innovative changes to KFC’s menu in the US.

Callahan’s journey began with a passion for cooking nurtured by her upbringing in the heart of Southern cuisine, drawing inspiration from her Mississippi and Louisiana roots.

Her love for food and its functionality led her to pursue a career in food science, guided by mentorship she received during her high school years.

After earning a Bachelor of Science degree in food science from Alabama Agricultural and Mechanical University in December 2022, Callahan embarked on a mission to make a difference in the food industry.

Driven by a desire for creative fulfillment, Callahan transitioned to a role as a food innovation technologist at KFC, drawn to the brand’s nostalgic significance in her family.

Since joining KFC in April 2023, Callahan has played a pivotal role in revamping the menu, introducing popular items like the Chizza to the US market.

The Chizza, a beloved international favorite, features two crispy chicken filets topped with marinara sauce, mozzarella cheese, and pepperoni.
